Dough

Just keep in mind not to let the mixture boil and stick to the sides of the bowl, as it will affect the taste and texture of your Idlis.

Fermentation

Now the important thing is - how long should we wait for the mixture to ferment? Well, this depends on your preference. Well, it's when a froth-like liquid starts to appear in the bowl - if you see that happening, then you are good to go.

To speed up the fermentation, add sugar, raisins, and water. Stir and let everything mix thoroughly. Let the mixture ferment for about an additional four hours before you use it. When it is done, please remove it from the heat and place it in an excellent vessel.

Blend the ingredients

Blend the ingredients thoroughly until you achieve the desired consistency. You don't want any lumps because they will give the batter a tough texture.
